Summer Cleaning and Mixed Berry Crumble Recipe

Summer’s here! It’s the season for juicy berries and peaches, ripe watermelon, refreshing cucumbers, ruby red tomatoes and so much more. This list barely skims the surface of the seasonal summer produce. One of my favorite ways to take advantage of the abundance summer has to offer is to make a fruit crumble. This easy dessert recipe is foolproof. You can throw it together on a weeknight or make it for a gathering since it’s always a crowd-pleaser.

I also love that this fruit crumble can be made with any seasonal fruit. Berries, peaches, nectarines, plums, rhubarb, apples are all fair game here. My favorite version (which I’m sharing below!) is a mixed berry crumble that uses strawberries, blueberries, blackberries, and raspberries. The berries burst to release their sweet juice that mingles with the crunchy oat crumble topping. It’s the perfect summer dessert! 

CLEANING SUMMER PRODUCE

Rinse thoroughly before enjoying.

I can’t talk about summer produce without mentioning stains! The only downside of taking advantage of the abundance of summer fruit and vegetables and the inevitable stains that come with it. Nothing says summer like biting into a freshly sliced watermelon and having the juice dribble down your chin onto your shirt! MIXED BERRY CRUMBLE

Serves 6-8

Prep time: 15 minutes

Cook time: 45-50 minutes

INGREDIENTS

6 cups (about 2 lbs) mixed berries (blueberries, strawberries, raspberries, blackberries)

2 tablespoons maple syrup or coconut sugar

1 lemon, juiced (about 2 tablespoons)

2 tablespoons arrowroot or organic cornstarch

1 teaspoon vanilla

½ teaspoon cinnamon

¼ teaspoon salt

¾ cup rolled oats

½ cup gluten-free 1:1 flour blend or oat flour

⅓ cup packed coconut or brown sugar

⅓ cup vegan butter or coconut oil

1 teaspoon cinnamon

½ teaspoon fine sea salt

INSTRUCTIONS

Preheat the oven to 350°F. Lightly grease a 2 quart casserole dish or 9” square pan with vegan butter or coconut oil. Set aside.

Place the mixed berries in a large bowl. Fill the bowl with water so that the berries are completely covered. Add 1 tablespoon of Biokleen Produce Wash for each 16oz of water.

Soak the berries for 2 minutes. Use your hand to swish the berries around in the water. Pour the berries into a colander and rinse thoroughly.

Add the clean berries to a large bowl. Gently toss with maple syrup, lemon juice, vanilla, arrowroot, cinnamon, and salt. Pour into the prepared pan.

For the crumble topping, combine the rolled oats, flour, brown sugar cinnamon, and salt in a mixing bowl. Add in the vegan butter or coconut oil. Use clean hands to crumble the fat into the dry mixture, until the dry ingredients are completely moistened and large clusters form. Sprinkle the crumble evenly over the berries.

Bake for 45-50 minutes or until the crisp is bubbling, and the crumble is golden brown on top. Let cool for at least 10 minutes before serving. Keep any leftovers stored in the refrigerator for up to 5 days.
